Barbee's South Western Stuffed Peppers

Ingredients:
3 large yellow peppers, tops removed and cleaned
3 large red peppers, tops removed and cleaned
1 green pepper, diced
1 medium onion, chopped
4 cloves of garlic, chopped
2 shallots, sliced
1 – 10-oz package of frozen corn, thawed
1 cup brown rice
2 cups chicken or vegetable broth
1 cup drained black beans
1 cup shredded cheese
1 cup mild or medium chunky salsa
salt and pepper, seasonings to taste

Directions:
Par boil in sauce pan for 5-minutes; remove with slotted spoon; set in
baking dish
Boil broth and cook rice according to directions
Mix together cooked rice, chopped onion and bell pepper, corn and salsa
generously stuff peppers in casserole
Bake 20-minutes at 350
Add shredded cheese and bake until melted.
