Barbee's Flourless Chocolate Cake

Ingredients:
8 oz of semi-sweet chocolate, finely chopped
6 eggs, separated
1⁄2 cup sugar
6 tablespoons butter
Powdered sugar for dusting
Sweetened whip cream

Directions:
Pre-heat oven to 275
Prepare 9 inch cake pan; add buttered parchment paper
Place finely chopped chocolate and butter in glass bowl; warm just until
melted in microwave
Let stand and cool.
In large bowl, beat egg whites until soft peaks form –
At medium speed, gradually add sugar
Continue beating at higher speed until stiff speaks form
Into cool chocolate, whisk egg yolks;
Add large scoop of beaten egg whites, begin folding gently.
When blended, add to remaining egg whites, fold gently with rolling
motion until blended.
Pour batter into prepared pan, gently smooth.
Bake for 45-50 minutes, until cake pulls from sides and center is set.
Cool completely.
For serving, dust with powdered sugar.
Serve with whip cream, garnish with berries, drizzle with chocolate.
